Butter Chicken

The Recipe
Ingredients:
8 chicken thigh fillets or 4 chicken fillets
3 heaped tablespoons of natural yogurt
1 teaspoon turmeric
2 teaspoon garam masala
6 cloves of garlic
2 tablespoons of ginger
2 teaspoons ground cumin
5 tablespoons tomato paste
2 onions
2 tomatoes
1 tin coconut milk
80g butter
Garam masala ingredients (you can make or buy):
3-4 cardamom pods or ½ teaspoon ground cardamom
1 teaspoon cumin seeds
1 teaspoon coriander seeds
2 cloves
1 teaspoon cinnamon
2 teaspoon chilli flakes (as much as you like)
Method:
To make garam masala, fry all spices for 1 minute until fragrant and blend in a pestle & mortem or spice blender.
Cut chicken into chunks and marinate chicken with yogurt, 3 cloves of finely sliced/grated garlic, 1 tablespoon of finely sliced/grated ginger, turmeric, 1 teaspoon garam masala. Leave for 15-20 minutes.
Heat a large pan on medium heat with 1 tablespoon oil, brown chicken in pan (in batches for best result) adding small knobs of butter to chicken.
Remove chicken and set to one side. Add diced onions to pan allow to soften for about 5 minutes.
Add garam masala, cumin, garlic and ginger, fry for 2 minutes. Add 1 tablespoon of butter.
Add tomatoes, tomato paste, coconut milk, chicken and bring to a simmer.
Add remaining butter and salt as you like.
Allow to simmer for 20 minutes.
Serve with rice and naan bread.
